Can I apply the workflow with 5 statuses for the scrum board only got 3 columns To Do - In Progress - Done. I've tried to create a workflow for the tasks, and it changes the board. If I could, how could I do that?

Do you mean mapping each of the 5 statuses of either one of the columns To Do/In Progress/Done?
If so, (assuming you're using a Team Managed Project, which you can check in the bottom left corner of your project), these tutorials might answer your question:
