how can you graph a calculated custom number field in jira

I am yet to find a way, even with eazybi a purchasable add-on.

Does anyone know of any ways to do this?

EazyBI can do this, we eventually got it working with the private version but needed some help from support. The doco for the plugin version is here: https://docs.eazybi.com/display/EAZYBIJIRA/Advanced+settings

You basically just need to tell EazyBI how to treat the field.

I think it's easier with the plugin version.
