I was trying to restore a project from a backup of my previous Jira instance while logged in my company's new Jira software instance. But after the backup restored, all of my projects in the new Jira instance is replaced with old projects list which was in the my previous Jira instance. I request the support to get this issue sorted. Please assist to recover my projects in the current Jira instance. Thanks!

Unfortunately you can't recover things back, based on what you have described.
Looking forward I would suggest a couple of things to consider from a data protection / recovery.
Reference the following articles:
Atlassian has very robust processes in place to manages any data loss scenarios due to Atlassian infrastructure (hardware or software), they are able to recover any data lost, but that does not address if the customer had a data loss incident due to accidents or malicious deletion of data, which is where the Atlassian's Cloud Security Shared Responsibilities Model plays a role and clearly delineates who is responsible for what.

reference my view here on #1, If your data set size is relatively small you can automate the backup part using scripts and unpublished API's, but backup is only one part of the challenge, you also need to ensure the data your backing up is restorable when needed.
Backing up data is relatively easy, restoring data back is very hard!
With third party tools look for the one which provides you the most flexibility for your specific use case. If you are interested I can share more on what we have built at Revyz. Unfortunately, if your organization does not back up Jira, then you can't restore an individual project. This falls under the shared responsibility model described by Atlassian here. In case you are using Confluence as well, here's another explanation.
I would recommend trying third-party Jira backups like Rewind. It's compliance-friendly and allows you to be in control of the data. It's also free for teams of up to 10 people.

The short answer is you can't. Jira doesn't support restoring just one project. Hopefully you took a backup before restoring so you can restore that. Then you need to create a NEW instance of Jira, restore the backup with the deleted project. There is a plugin in the marketplace to move projects. I don't remember the name, but you need to install it as directed and move the old project into the new instance. In Jira, delete means delete.

Unfortunately, in this situation, if you didn't have a backup of your data, it woyld be impossible to restore the lost data. As it was already mentioned Atlassian follows the Cloud Security Shared Responsibility Model, within which the sevice provider is responsible for the system, hosting, and application of its service, while the user's responsibility is to take care of his data protection and backup. (You can read more about Shared Responsibility Model: https://community.atlassian.com/t5/App-Central/Atlassian-Cloud-Security-Shared-Responsibility-Model-Who-Is/td-p/2489833 ).
When it comes to backup, you have a few options:
1. Jira Backup Manager, which facilitates the snapshots of your Jira instance. You can perform manual exports of pages and users every 24 or 48 hours (including attachments);
2. Backup scripts;
3. Third-party backup tools. For exmaple, GitProtect provides backup and Disaster Recovery for Jira Cloud, Jira Service Management, and Jira Work Management. With automated scheduled backups that you can perform at any time, you will be able to restore ypour data from any point in time or granularly to the same or a new account (without overwritting of your data), to a free Jira account with a no-user recovery option, or to your local device.
