is there a way to separte the add-ins from jira service desk from other projects in Jira?
I am currently testing Jira service desk there are a few add-ins I would like to try and test along with the service desk but I dont want these add-ins to be showing available on other jira projects we currently have in place is there a way to separate?

How about having a test instance. In the case anything goes wrong, your production instance won't be impacted.

Generally there is no feature in Jira to select the projects a App or Add-on is available to. This is due to the diverse nature of apps, many bring features that are implements in form of Custom Fields or bring automations on a project level or global level. Just two examples.
So maybe follow @Victor Mutambuki [Mumo Systems]'s answer and set up a test system to be able to test apps in quiet without disturbing users. :)

A slight expansion to that - Apps are installed in the Jira Core framework, not in the Applications that they add functions to. There's nothing in Jira that says "this App belongs to that", it's all up to the App to say "hey, I require this" and "I'm only going to work here".
