Can anyone advise how to change the formatting before or after writing a body of text (in my case, Acceptance Criteria) so as to remove the line breaks. When I hit return I just want to go to the next line, but it creates like a double carriage return. Very annoying and makes reading a big ticket difficult.

On the new issue view, the editor is Markdown, and using Enter or pasting a text that has a line break, it will add double space.
There is a feature request suggesting improvements for that:

It's possible to disable the new view, but it works only for Classic projects.
Go to Profile picture > Personal settings and disable Jira Labs.
Note that, in March 2021 all users will be moved to the new issue view, so the workaround to use the old view will only work for a while.
