I want to turn a software project into a service desk project so we can begin allowing end users to submit support requests; I've poured over the documentation here but was unable to find anything that would affect the project adversely if I did the change, however I really would appreciate a second opinion from an more advanced user.

There should be no adverse changes. You will get a bunch of additional features which you may or may not use-
My advice:
* Do it in the test environment first.
* Do it right. Create a new project for this use case instead of converting the old one. Sure its more work, but you can be sure that it does not bite you 6 months down the lane.
