I must confess that I do not understand what exactly you need help with. Can you please elaborate a little bit more about your current scenario and what exactly do you need?
Per your description, I could understand that sometime in the past when you added a fix version to your issues, the Due date field was automatically filled with the Fix version release date. Have I understood it correctly?
If that's the behavior you are looking to implement in your Jira application again, you can do it by using the smart values of Jira automation. These would be the steps:
1 - Navigate to your Project > Project settings > Automation for Jira
2 - Create the following rule, that will properly set your due date with the version release date when to Fix version of the issue is changed:
