Does anyone know how to change the button that says "Save" to "Send" when doing "Reply to Customer" in the Activities of an Issue? Makes it a bit clearer to the user that they are sending an email!

As a simple answer, you cannot change this wording within Jira Cloud. From Jira's point of view, you are saving the comment - if your notification sends an email, this is a next step.
