How would I approach creating a plugin allowing selection of more columns for the "my requests" list

I have limited experience with APIs but decent java knowledge and I would like to create a lightweight single function plugin to add more column options when you click on "manage columns" in the "my requests" page. There are a couple of tools on the marketplace that allow for it but as part of a much larger suite of changes, none of which my team will use. 

Any help/guidance would be greatly appreciated!
