I have a field that should be visible and editable only for insight "Manager" users.
If I hide the field, the only ones who will not be able to see it are the users type "Users", but I need them to be hidden from the "Developers" as well. How can I do it?

Unfortunately, traditional field-level permissions are not possible in Jira.  There is an App I've heard of that did this, but it required to make changes to your Jira install - which might affect your support from Atlassian.

I found this old request to add these kinds of permissions, but it was closed as won't do. Sorry. https://jira.atlassian.com/browse/JRASERVER-1330

As a work-around to this, you might have a pop-up screen as part of a workflow transition, then set the conditions for that transition such that your managers are the only ones who can use that transition.  Then only your managers have edit access to that field to edit it.  It might not work in your specific case, but it's about the only way I can think to solve this request.
