How can I modify the list view in a release?

Where would I be able to modify the display of the list of issues in a Release? At the moment only 2-3 pieces of information are displayed when looking at a list, I would like to add other columns for example Estimated Time remained.

That is not possible.  There are several open suggestions for this idea, which you may vote for/watch here:

As a work-around for the issue list for the release, you could make a JQL query and add the columns you want from the available list.
