Why can't I remove a custom field from the version statistics?

I have a situation where some but not all projects in our system have custom fields that were added to their version statistics via the methods described at ...

But for one reasons or another, there is no longer a "Remove" option for those statistics, at least on some projects.

We are planning to remove this custom field altogether but we don't know if this is safe while these references still exist. The field is actually a Story Point field that was created in JIRA seperately from the one it created, and having both is causing confusion.

I noticed that I *can* remove the statistic if I switch the project template to Default instead of Scrum. I can't tell what setting in the template is causing this.
