How do you set the possible values for a field?

This question is in reference to Atlassian Documentation: Specifying field behavior

I accidentally created some issues with the field "resolution" set to "fixed" and I want to put it back to blank but I cannot do that. Blank is not one of the choices for the field.

You will have to create a Workflow Transition and use the Update Field to change the Resolution of the issue.
