What are the definitions of Project Roles?

Is there documentation anywhere that defines each project role? For example (User, Project Access, Service Desk Team etc..)

I think this KB will be a good start. In short, roles are not something predefined and static, they are just another flexible way to operate with permissions in Jira projects.

However, there are some Service Desk specific roles, more details you can find here.

Thank you, in our Jira Services Desk there are defined roles when we add a user to a project, for example, they may have the "Project Access"  or User Access, Admin Access and so on. I was hoping to find each one defined, but these may have been created in our Organization though.

Project roles are essentially define by the permission scheme on what each role is capable of. It's all depends on your organization. It could easily be documented if you have a handful of permission schemes as templates. On the other hand, if there are many permission scheme templates, then it look like your organization setup is flexible allowing project owners to define their own project roles for the projects.

There's really isn't a one size fits all and that's why there's a lot of flexible in building out roles. There are common guidelines which is the default permission schemes that come with Jira.
