Can you share some screenshots? Specifically in the Configure section of the gadget.

My query is, instead of showing icon for Issue type (as per below screen cap), can we write the text e.g. Task or Sub Task in the column on the filter results gadget dashboard?

No, unfortunately, you will not be able to do that with out of the box Jira.
