I have several projects on my jira site and some collaborators should not have access to certain projects especially the projects on which they are not working.
But I share a project with a new user, he has access to all the other projects.
How to give access to a specific project to a user?

You mention in Product Plan you're on a Free version of Jira.
In Free, changes to permission schemes are restricted and are not configurable, so all users can see all projects by default. Read more about permissions in Free plans on this page.
You'll need to upgrade to Standard or Premium to take advantage of permission schemes. If you do upgrade, I find these two pages are a good starting point to understand how permissions work:

You could be placing new users into default groups and those groups are used in permission schemes of various projects. You need to break that chain by either not placing users into these groups or remove the groups from the permission schemes.
