Session collation unsupported after setting locale in Jira

Hello, we are using Jira v7.12.3

After changing locale in Jira to language es (spanish) and country ES (Spain) as explained in https://confluence.atlassian.com/jirakb/setting-locale-in-jira-314450433.html the instance health check reports the following problem:

The session collation of: 'SPANISH' is unsupported by JIRA.

How can we solve this?

PD: the reason we need to change locale in Jira is because Jira Calendar Plugin (4.0.3) shows sunday as first day of week, but we need it to be monday. There are several questions in the community about this topic but unfortunately none of them are working for us. Only by changing locale we can achieve Jira Calendar Plugin to consider monday as the first day of the week.
