I've followed the instructions at https://support.zendesk.com/entries/20560907-zendesk-for-jira-getting-started#using_syncing_comments_and_status to link Zendesk to JIRA and it works great!
However, if I create a new project in JIRA, I don't automatically see it in the "Share with JIRA" popup in Zendesk.
How do I easily maintain the list of exposed JIRA projects without having to go back through the Manage Connector Wizard each time? Is it possible?
I had a similar problem, and it was that I didn't have the new project associated with the mapping scheme.
If you go into the project settings in JIRA and associate the new project with the existing "Zendesk Mapping Scheme" that should do the trick (did for me anyhow!)

None of these answered the question, by the way. To associate an un-associated Jira Project with your existing Zendesk mapping, you go into that JIRA Project's Administration screen, and there is a "Remote Mappings" section right on the main Admin screen. Click there and it will give you a pop-up where you can choose "Zendesk Mappings" (or whatever yours is called). Next time you're in Zendesk and select your JIRA source and then click the pop-up for your Projects, the additional one will be listed!

I've just realised someone has replied to this, sorry.
No - your response doesn't solve my problem.
Both Zendesk and JIRA are working together correctly at the point I create the application link - so I can choose the 4 projects that already in JIRA, no problem ... and then create a ticket in Zendesk, and choose which of the 4 projects to link to.
My question was what happens if I add a new 5th project in JIRA? At the moment, I need to go back deep in the administration of JIRA and amend the application link just to add a new project that one of my guys has added .... which is terrible!
Is there a way to always show all NEW ADDED projects in JIRA to Zendesk?
Or is there an easier way when creating a new project in JIRA to say "expose this to Zendesk" ?!?!

It sounds like you might have an issue at step 3 here:
By exposed JIRA projects do you mean those issues that you have sent over to Zendesk? If so, I'm thinking you might be able to run a report in Zendesk to see which issues were created through the plugin.
