Is it possible to assign multiple categories to a project in JIRA?

No change - a project can only belong to 0 or 1 category, still.

Nope. A project can only be in one category.

I don't know of any workarounds, unless you use "profields" plugin and add a custom field in there.

would be really nice. We use the categories for the central management of view filters for different dimensions. (team board, portfolio view, strategic axis, ...). Updating 100 filters for new projects is a real pain.
