When I move a sub-task to "Done" Status - automation should log the remaining hours time and update the field to zero. Appreciate help and guidance on this. thanks in advance.

I was able to create this rule very quickly. It is not complicated.

Was the Remaining Time set to zero?
Setting Remaining Time and logging hours are two different things. How much time do you want to automatically log?

The idea is that I need to add/log the hours in "Remaining estimate" to "Time Spent" . then I have to make "Remaining Estimate" to zero as the task is completed.

In the Automation feature there is an Action for Log Work, but it seems to require an explicit and static amount of time to be logged.
I have not worked extensively with the Automation feature, but I found this old post on the predecessor product where the participants talked about using the Edit Issue action and JSON to set the remaining time estimate and to log work.

I'm not sure if the specific fields are all still supported and referenced as described in that post, but you could experiment with it and see what works.
