Yes, you could use a transition based trigger and a field update.

But I'd strongly recommend that you do not do this, as it pretty much breaks all the reporting and makes your estimates pretty much pointless.

To second this with an old saying - "the story is shipped when it's done". If you need to ship it in individual pieces, then it likely shouldn't be a single story to begin with, but rather sounds like an Epic.

Subtracting story points from a story while it's in progress results in sprint scope change - it is not "burnt down", it's a scope change.
