We can only see the "Reporter" field at the moment, which only shows the email address for our "Customer" users on Service Desk (that haven't logged in to JIRA). For our full JIRA users it shows their username, when we also want to see their email address.
Unfortunately that seems not to be possible. The reason why you can see the email of SD Users is because JIRA does not create a username string for SD users, and the it's value is populated with the email address. In other words, both email address and username have the same information.
The easiest way to find out a user's email is to mouse over his username.
