If I delete a status from a workflow then apply, what happens to items assigned the deleted status

I need to delete a status from a workflow applied to a project. I know I need to make it inactive, delete the status, then apply it to the project.  But what happens to any items in the project that were currently assigned the workflow status that I deleted?  What status will they now be assigned?  For example, if my workflow is To Do, In Progress, In Review, Complete--and I remove the In Review status, what happens to items that were in the In Review Status when I apply the workflow that no longer has that status?

You will be prompted to map any issues in that status to an existing status. If there are no issues in that status then you don’t need to do anything.
