How to setup default field/Issue type configuration for all new projects

I would like to setup a default field configuration for all the new projects (classic) created in Jira.

At the moment, I need to add some of the custom fields manually and its a process I hate. Is there anyway to configure the default field configuration?

You can create a project that has all the settings that you would like your projects to start out with.  When you create a new project you can then check the share setting with an existing project and select the project you created with all your settings. 

You can also just apply your field and screen scheme on all of your new projects.

In that case should I create new Kanban/Scrum boards every time I create a new project?

Yes, you will need to create a new board after you create the project.
