I would like to have dashboards with Average age of the ticket and Resolution time but not from the time the ticket was created, I need it from To do status. Has anyone tried this before and which filters should be used?

As you can see from the previous answers, this is an area where many Jira users rely on apps from the Atlassian Marketplace to fulfil their reporting needs.
If a Marketplace app is an option for you, I think you'd like the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a number of so-called history columns that aren’t natively available, including an issue's time between created and resolved, time in [status], or time between [status] and [status].
This is how it looks in action:
As you can see above, you can easily sort and filter by your history columns, and also use them across JXL's advanced features, such as support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting.

There are few ways to achieve this requirement. You can use Jira Automation to populate a custom field on status change. or you can also use Jira Rest API's to pull this data from issue change history.
Another option could be to use a mktplace app. If you would be interested in the same, you can try out our app
The app allows to group your statuses and define your own cycle time / resolution. Also with this app you generate time in status for multiple issues with multiple filter and grouping options. The app can easily be added as a dashboard gadget.

I'm afraid that there is no way to do this in Jira. You could try the Control Chart report, but I am not sure if it will fully fill your needs.
A potential solution would be to search on Atlassian Marketplace for an app that provides this info.
If you consider the option of using an app, our Great Gadgets app offers some gadgets that allows measuring the time between a specific status (like To Do) until resolution.
The result can displayed in various ways.
By using the Cycle Time Trend gadget you can display the average age for past time intervals, overall average, and the trend showing if your team improves in time or not.
By using the Cycle Time Control Chart gadget you can see the age for individual issues, easily identify outliers, see the average age.
Also, these gadgets can display a Data tab showing the age of individual issues. This can be exported in CSV for further processing.

Jira’s default average age gadget calculates from the ticket’s creation date rather than from a specific status. This limitation means there isn’t a straightforward way to start measuring age from "To Do" within native Jira.
To achieve this level of customization, a third-party app like Timepiece -Time in Status for Jira can help. Timepiece allows you to set specific statuses as starting points for metrics like Average Age and Resolution Time, giving you more flexibility and accuracy in tracking:
Duration Between Statuses report type which shows the duration between two specific statuses. This report type even allows the user to exclude the times for "pause" statuses. The screenshots below are for Response Time and Resolution Time, but the application is not limited to these metrics. Since you can create your own metrics, you can create metrics like issue age, cycle time, lead time.
For all numeric report types, you can calculate averages and sums of those durations grouped by the issue fields you select. For example, in the screenshots below, the Duration Between Status report shows the total monthly response and resolution times for each assignee in a project.
With Timepiece, all reports can be displayed directly on your Jira dashboard using the Timepiece Dashboard Gadget.
