How to make setting custom status set resolved

When an issue is marked as "Done", Jira considers it resolved.  However,  I created a status called "Rejected" and when I set that status, the issue is still considered "Unresolved". 

How can I make the issue considered "Resolved" when the status is set as "Rejected"?

you could a postfunction to your reject transition to set the resolution accordingly.
