We are hosting our servers and would like to know how we can have our users click on the Authenticate with Google. The user directories are connected to a Google LDAP server and we also have 9 different domains. We are able to do this with other services, but need guidance on how we can do this with our Jira server and confluence on prem server.

Regarding your solution, do you need both plugins to work for JIRA and Confluence, or would it be possible that the latter could sync with the GSuite user directory on JIRA?

In Jira Standalone directly, no, the integrated Crowd directory on a Jira Standalone installation cannot integrate with google at this time, but a separate Crowd server does have an integration option, as well as Third party SSO apps.
Check out this Feature request with some details on the options available and links to the relevant documentation under the "Workaround" section in the description:
And This Link is a search in market place for Alternate Jira Server Google Apps integration options currently available not listed on the Feature request that may also extending an SSO option to a Jira Server Standalone install.
Also make sure to add a vote to the feature request to track continued interest in integration.
