We work with task and subtasks. We set the Estimates hours on the task and log our hours ion the sub-task. When a sub-task has no estimate itself and hours are written, the hours are added to that Estimate of the task where it belongs to. Can we prevent that the estimated hours of the main task will be changed writing hours on sub-tasks which have no estimate?

The parent task estimated hours will be the sum of all estimated hours for each sub task. When you log work against sub-tasks, your parent issue remaining estimate is automatically adjusted.

So if you want to exclude sub-tasks work hours from parent then, In the estimate section of the display, there is an option to toggle between "all" and "parent only" display. Try it.
