I am trying to create a new Status type "bug identification" and start a workflow for type bug from there. Every workflow I create starts with an initial status and won't allow me to edit or change it - how do I get around this?
I've been able to make some start with "To Do" and "Backlog" but only by copying a workflow that already exists.
I do have global admin privileges - please advise.

What version of the product are you using?
In the Workflow diagram you should be able to click on the Create transition, then grab the dot at the arrow end of the transition, and drag the arrow end of the transition to another status.

Can you provide a screen image of your workflow diagram.
In what way is it not letting your delete the open status? Do you get an error message?

You will have to drag the end of "Create" transition to another status, such as "Bug Identification". Once this is done, "Open" will be put in red circle, which means there is no transition to the status any more. Then you can delete it.
The only problem occurs when there are still issues in that status, so you may want to check this before. All the issues must be transitioned into another status before deleting it.
