We cannot seem to assign a Category on issues under List View. Whenever we select a category, it will populate the field then it will disappear right away.

I've seen that happen sporadically in my Free Jira environment. I have not proactively investigated it, but will notice a few days later that the problem no longer happens.
Is it consistently happening to all users with all browsers in your environment? Have you tried other browsers or clearing your browser cache?
If you view the issue details when this happens do you see that the Category value was actually saved?

When we click the issue details, the Category value doesn't save.
Tried it now with a different browser and works. Tried it again with the old browser after and it now works with that browser... weird.
