I currently use the only type of sub-task available through Jira, but I need to create several types, and I've managed to create them, but they don't appear in the desired frame

Are you using a company managed project or team managed project? If it is a company managed project you have to update the issue type scheme that the project is using before the new issue type will be available.

Okay, so team managed projects can only have a single sub-task, you cannot create new ones in it. The screen shot above is showing issue types available for company managed projects, and those cannot be used in a team managed one.

I haven't moved an issue over from a team managed project to a company managed one if you have custom field in it. But you can export all issues to a csv file and then import them into the new project and make sure that fields are mapping correctly.
