I would not like to create all these projects in these categories to study their features. Therefore, I would be grateful for their description.

You are actually mixing up products (with features) and templates.

The Atlassian products here are:

Service management

Work management

And those projects can be set up to be used by:

Marketing
Human resources
Finance
Design
Personal
Operations
Legal
Sales

Most of these projects tho are templates for Jira Work Management. The functionality will be the same but the main difference will be different flows/fields.
