Pick the gadgets you want to have and use filters instead of a single selected project. This -of course- only works with gadgets ready to get their data trough filters (like the agile gadget and most of the "none-agile" gadgets). The old "classic" gadgets are too old and were developed in a time, where greenhopper was limited to work with data coming from single projects instead of multiple projects.
If you want to use Greenhopper to the max, you should really consider using the SCRUM- and Rapid-Boards. Those can be filled by using JQL-filters
