Search from field manually changed

Edited

In my project, we have a custom field to determine an internal priority, which is set through automation, but this field is manually changed by analysts. Does anyone have a suggestion to prevent this alteration and a tip on how I can use JQL to search for issues that had the priority field changed manually?
