Scrum and kanban are frameworks of agile methodologies that are a set of ideas and principles that help us to make a shipping product. Atlassian considers the frameworks and implements them in JIRA.
Scrum teams commit to deliver a part of final products through intervals called sprint and it takes 2 to 4 weeks. So in Scrum boards, you can define sprints and this is unique to scrum boards.
Kanban visualizes work and limits Work in Progress to increase efficiency but you could use this feature on both boards.

First can be found in General setting of board configuration page, where in you can hide the issues older than based on your interest, and second one is to show the epic panel in the side rather than the issue showing on board.
