Hi,
is it possible to define a "robotic" user for the integration flows?
What user can be used by an external system to do some operations (like edit, create..)?

Sure that is absolutely possible. It won't be a robotic user but a real user tho.
As you are on cloud, you could try it first with the "Automation for JIRA" user who has a lot of permissions already or you will need to create a new user with a dummy or real email address and have them work as a regular user would.
meaning you have to grant them a license, permissions,... depending on what you want them to do.
Where is the credentials of "Automation for JIRA" User?
I have to give It to the external system for REST API calls.

That will be an internal system user so if you need it to work with an external application you will need to create your own.
you can try contacting Atlassian support directly through a ticket https://support.atlassian.com/contact but I don’t think they’ll give it to you.
so your best bet will be to create a new user yourself and give it a name that reflects its use. And then of course grant it the needed permissions
