Once the Sprint has been closed, is it possible to maybe create/send an email from JIRA to defined email addresses that would offer a summary of work completed in the most recent closed sprint, for more than one project.
What user directory is in use here? Is it the Atlassian ID, Google or your own SAML directory?

Ok, Atlassian ID accounts belong to the users, not the system they have been granted access to. The email address on an Atlassian account is part of the account, not part of Jira.
This means that while an admin can impersonate a user in Jira, they can't change user details because they're not the owner of the account.
The user themselves will need to log into https://id.atlassian.com and hit the "change email" on their profile.

Thanks for pointing me in this direction. Unfortunately when the user goes in he can not change his email and I am not able to do it as an administrator. How else can this get done?
