Hello Jira Community.
I am having trouble filtering out specific users to only see projects they pertain to. I have two software projects set up. Each software project has a specific set of engineers that only should see the project associated with them.
I have set up two specific groups
TC Software Project
QB Software Project
I then added the specific members to each group that need to see that specific project.
Next I added the group product access as Jira Software to each of these groups.
I then went to each software project and edited the filter shares, however the group that i created is not listed on the drop down of groups. I must be missing a step in the filtering, wondering if anyone can help me out.

Welcome to the community.
When sharing filters with user groups you will see only the groups to which you belong. You will need to add yourself to each of the groups, change the filter sharing, then you can remove yourself from each group.
However, this may not accomplish what you intend. Limiting the shares on a filter does not limit visibility of the issues in the project via something like Search Issues. Are you really trying to prevent the users from having any visibility into the other group's project?
Yes, I have a project dedicated to my low code platform and then a project dedicated to my custom application.
so I have quickbase (low code)engineers that have nothing to do with the custom built app and engineers on that project.
When they first login and click projects, they see quickbase, custom app, and the service desk.
I figured I could just create a group (Quickbase-Project) and add the product access for jira software, then add the quickbase engineers To the group. I then tried to link that group to just the quickbase project by going into board settings and then adjusting the filter, but can’t seem to figure out how to remove that custom project from the quickbase engineers view.

Are these Company Managed projects or Team Managed projects? It will say in the navigation pane on the left at the bottom of that pane.
If the projects are Company Managed, then you can limit visibility to the issues in the project by modifying the Permission Scheme for that project and changing who has the Browse Projects permission.

Modifying the permission may not remove the project from the Project List, but it will prevent users from seeing the issues within the project through Search or any saved/shared filters, boards, or gadgets.
