I have a gadget in a dashboard, to which I'd like to add an issue create date, but I haven't created a custom field that records when issues are created. I suppose I must do that, unless there is some built-in system field I can display.

Yes, there is a system field that automatically records the date/time an issue was created. It is the Created field.
Additionally, the Updated field automatically records the last date/time an issue was updated.
And the Resolved field automatically records the time when the Resolution field was set, and is cleared if the Resolution field is cleard.
