Is it possible to know who activated Parallel Sprint on my instance?

There is no log for that in audit log.

The short answer is no, and the reason is it is not logged. You could narrow it down to your Jira admins and Site admins, they are the only ones that can make product changes like that.

Hi Pedro,

 

Short answer, only Jira Admins can enable the parallel sprints option from configuration.

You may want to check with existing Jira Admins of your instance for same.
