Hide some of the options/make them not selectable instead of removing

Hi Team,

Is it possible to just hide some of the options/make them not selectable? Instead of removing them entirely and losing historical data.

We have script runner, JMWE and JSU.

In a Multi Select field you can deactivate the entries. These are then no longer selectable but you keep historical data.
