How to add 1 tasks with multiple assignees and have the tasks show up on the "Assignee" board view?

Hi Amanda - Welcome to the Atlassian Community!

It is not possible to assign a single issue to multiple persons. You could add a person as a Watcher and then configure a Quick Filter on the board for watcher = currentUser()
