For a public demo instance we want to make sure the users dont change the email adresses of the existing users,  for which they will have the credentials.

How can that be done?

You can't do it in JIRA without hacking code really, it assumes real users can change their profiles.

Your idea about LDAP is a good approach, but you could also do it with Crowd or any other external directories.

My first idea was to set up an LDAP server and have the user accounts be synced from there, id expect the profile fields to be read only in that case.

But that sounds like using a sledge hammer to crack a nut to me. 

Any other ideas?
