Would it be possible to open predefined Confluence template in ‘editing’ mode directly from the JIRA side and put this functionality behind some button inside the JIRA issue as an option?

That functionality doesn't exist at the moment in any sort of configurable way. You can create Confluence pages in very specific contexts, like from an Agile board's Sprint report or from a Service Desk ticket.

What you'd need is a sort of configured custom field in which you'd specify the template to be used. That would make a button appear in the issue which, when pressed, would open Confluence in Edit mode, with presumably some info from the JIRA issue set in specific spots in the Confluence template.

So yeah, that doesn't exist. You'd need to code a quite substantial JIRA plugin to get a behavior like that.
