You cannot edit the estimate once it is in an active sprint. However, you can edit the story points. What's the difference between the two fields?
The original estimate is exactly that - what you think it will take in terms of time. You can't edit it because it doesn't make sense to do so, it's trying to trap what you thought originally. But you can change the remaining estimate and log work to show effort made towards it.
Story points are far more simple - an issue will take X story points. If you want to change it, you can. That's about it, it doesn't do any more.
I believe the estimates are tied to actual time logged to the stories, whereas story points are not.
