Priority field keeps changing back to default value

Every time we set the system "Priority" field to another value than the default value, it changes back to the default upon updating the issue. Why is it doing that? And how can I fix it?

You've got some customisation that is changing the value - could be javascript on the commit, or it might be a post-function or listener picking up the edit event and changing it.
