All our issues have a custom field for CC. I'd like to bulk edit all open issues and add myself to the list of CC-ed users. Is there a straight forward way to do this?
I created a filter for all open issues and then tried bulk edit -> "edit issues": but I don't see the custom field I'd like to add myself to.

Just to make sure that we are on the same page, are you using a User Picker custom field?
If so, I was able to test here and the field shows when bulk editing.
If not, can you let us know what is the type of the field?
Can you please give us more details about the field that you are using?
What project type are you using? Is it Service Desk, Business or Software?
While I was editing the issues, it was showing many fields, so to better filter, I searched for the field on the page to highlight it.
Once we hear from you, we will be able to better understand to replicate the issue on a test environment.
