This is not possible out of the box, you can only link workflows to issue types within a project. So you can have a one-to-one correspondence between workflows and issue types. This way you can discriminate issue types in your boards using the appropriate JQL. Having a separate component for each issue type would only allow to have a default assignee manageable by the project admins.
You could use a plug-in such as ScriptRunner to set a component/assignee according to the issue type if you really need it.
