Export to CSV or word will be enough?

If you have to have a re-storable export then db/xml backup is the way.

You could query.. But that wouldn't be a backing up of a single issue.. 

https://confluence.atlassian.com/jirakb/to-find-or-view-a-jira-issue-from-the-database-using-sql-744524576.html has some queries but that will not capture each and every details of the issue. which will be helpful for restore them.
