Is it possible to make certain changes to subtasks be carried over to their parent task?
For example, that the start date of the parent task is the same as the most recent date of the subtasks, or that the sum of the times of the subtasks are stored in a field of the parent task, etc.
Is it possible to do it with automation scheduling, or is there another easier way?

Are you using Jira Cloud or Jira Server/Data Center? It could make a difference in the Automation features available to you.
With Automation it is definitely possible to do the things you asked about. There are several posts in the Jira communities on automation topics. You may want to search the Jira Software community for additional posts.
